I keep reading references about "wag bags" in blogs about travel to the Southwest, but I'm confused about what it is and whether I need it. I'm going to the classic Utah parks, staying in the park campgrounds, and I plan to go on long day hikes. Any insight?

Wag bags are a way to dispose of human waste in the desert and in alpine environments when you don't have a toilet nearby. You basically poop in a bag and then carry it with you until you find a dumpster. Wag bags are essential for backpacking in wilderness areas in the Southwest, where the soil isn't able to absorb human waste as fast as in humid climes. For example, you would need wag bags for backpacking the Palisades in California or Paria Canyon in Utah/Arizona.
For your particular road trip around the parks, if all of your campgrounds have flush toilets or outhouses, then you don't need wag bags. It might be a good idea to keep a wag bag in your hiking pack for the long hikes, like the Subway in Zion, but for the most part you wouldn't need wag bags. Popular hikes like Angels Landing in Zion or Bright Angel Trail in Grand Canyon have pit toilets along the way. Read the trail descriptions and if it sounds like you won't have access to a toilet the entire day, then consider getting a wag bag for emergencies.
